Pescartarian Foods

So my mom is a pescatarian: fish only. (I APPROVE!)
She does eat eggs, cheese and diary. But no meats. Her reason is because of all the ways animals are treated chemically and synthetically. She believes we should eat animals. Our species wouldn't be here today without the source of animals. Although there are many other things to eat than animals, everyone has their own views and choices and no one should overly preach their side without seeing the other persons side. As long as you do what you feel is best that is all that matters!!
Here are some of her favorite foods:
Homemade Sushi:
Yes homemade!!!
1 cup of sushi rice
1/8 tsp of rice vinegar
1 fillet of tuna
3 seaweed
1 bamboo roller
green onion
cucumber
avocado
Spicy Tuna: mayo + sriracha (add at your own risk)
So surprisingly easy and good. However, I was not able to taste any.

Spinach squash zucchini salad:
saute zuchinni and squash in SMALL amount of olive oil (it absorbs quick)
throw it on a bed of spinach with some cheese.
add some tofurky for your protein
add some Tonys seasoning

The infamous Soy Latte:
HER FAVORITE
the espresso machine was an amazing $30 investment.
all you need is hot espresso and soy milk. caramel flavoring is nice too.

Silk's Soy Latte Vanilla:
Sadly, this was not very good! Ah, I wish I could say otherwise because I am huge huge huge fan of Silk. I can't live without it. But I think the light version of this ruins the taste. Hopefully they come out with a non-light.

Shrimp Tacos:
EASY
saute onion, garlic, salt, pepper
add shrimp
add lemon juice
and yer done!
add some fresh cilantro, tomatoes, yellow peppers.
Healthy and super quick

Spring rolls:
Cooked cold shrimp
cilantro
carrots
lettuce
rice paper
The directions on how to handle the rice paper are on the package. Roll it up and eat it. Another easy, quick meal/snack

Egg whites w/ peppers and spinach:
egg whites
yellow pepper
red pepper
lots of spinach
blackberries on the side
and 1 probiotic capsule!
